

Broccoli salad may not be on the top of your camping meal list but we’re here to make a case for it. Camping meals are all about being easy, delicious and simple. But simplicity doesn’t mean it’s bland and boring – some of the most simple meals are packed with flavor and character. This Bacon Broccoli Salad is all of these things. Simple, so delicious and easy to throw together. But packed with flavor as the bacon, broccoli, craisins and yogurt blends perfectly.

We love making salads in mason jars. Especially for camping. You can use small jars and give one to each person or use a few large jars and chow down family style. The mason jar is an easy way to transport salad and is an easy way to have meals prepared ahead of time. You can certainly make this broccoli salad at the campsite, but preparing in the comforts of a real kitchen is ideal.

There are a lot of variations on broccoli salad and we adapted some of our favorites in to this bacon packed version. The addition of greek yogurt and pecans really give this salad a twist. In a very good way. Most broccoli salads call for a lot of sugar, up to 4 tablespoons. We like a little more tangy of a salad so we skip most of that sugar, usually only putting about 1 tablespoon in. Plus it makes for a much more healthy camping meal!
We were pleasantly surprised at how well the broccoli salad went over at the campsite when we pulled the mason jar out of the cooler. We figured there would be complaints! But we soon realized, it’s fun to eat junk food on a camping weekend but a fresh meal goes a long way in making people smile.
- 1 large head of broccoli
- ½ cup red onion, chopped
- ½ c craisins
- ½ c peacans, toasted
- 8 pieces bacon, cooked and crumbled
- 1 cup greek yogurt
- 1-2 tbs sugar
- 2 tsp white vinegar
- Cook bacon, drain and crumble.
- In a small bowl, combine greek yogurt, sugar and vinegar together and set aside.
- Cut up broccoli in to smaller chunks. In a large mixing bowl combine cut up broccoli, red onion, craisins, pecans and crumbled bacon. Pour dressing over and mix to thoroughly incorporate.
