Easy Pie Iron Stuffed French Toast

We go camping to relax, not spend all day preparing meals for our family to eat. But we want to eat well, so we need to find something easy. And by easy we don’t mean cereal. If we’re going to be living outdoors for the weekend we should use that to our advantage. The campfire provides an easy way to make meals, especially if you have a pie iron. From biscuits and gravy to breakfast burritos the possibilities are endless. On our last camping trip we were looking for easy breakfast ideas that would be fun to make and fast to clean up. We landed on Stuffed French Toast in the pie iron. We were not disappointed.

By the way, if you’re looking for a pie iron, our current favorite is the Rome 1705.

Stuffed French Toast

My husband and I love french toast, it is in a breakfast rotation at our home. We have gotten more creative with our recipes over the years adding fruits, different sauces, and different types of bread. Most have turned out well. We were excited to try french toast over the campfire and pleased at how easy the recipe is. With only 6 ingredients, this pie iron stuffed french toast is perfect.

For the most part, I like to prepare as much of a meal ahead of time in the comforts of my home, but this stuffed french toast recipe was so easy I really didn’t have to do much! The only thing I did before we left was to chop the walnuts up to more manageable pieces. There are a ton of stuffed french toast recipes out there, but we used this one from getoutcamping.com. We loved using cinnamon swirl bread instead of regular white bread. It allowed us to leave the spices at home and just use the bread for the french toast flavoring. We did adapt it slightly in that we just buttered the cinnamon swirl bread well, we didn’t actually dip it into the egg and milk mixture. The pie iron stuffed french toast ended up tasting better than the french toast we make at home. We were so impressed with how it turned out, that we will be making this every time we go camping!

By the way, if you’re looking for a pie iron you can’t go wrong with the Rome 1705.

Easy Breakfast Ideas For Camping: Stuffed French Toast

Ingredients
  • 2 slices cinnamon swirl bread
  • 1 tsp chopped walnuts
  • 1 tablespoon cream cheese
  • 5 banana slices
  • Butter
  • Maple Syrup for serving

Instructions
  1. Heat pie iron, spray with cooking spray or melted butter.
  2. Butter the cinnamon swirl bread well. Put 1 slice in pie iron, spread 1 tablespoon of cream cheese onto bread, add the 5 slices of banana and 1 tsp walnuts. Top with second dipped bread.
  3. Cook til browned. Usually around 3 minutes per side. Serve w/maple syrup.
