Pie Iron Recipe – Chicken Chimichangas

Chicken Chimichangas — the perfect Mexican comfort food. What better way to have it than out at the campfire, too? We found this recipe from Susanne’s Blog , and let me tell you, it is mouth watering!

Mexican food is by far one of our favorite cuisines. To say I just like it is an understatement. It is something that I crave on a weekly basis. So even when camping we are most likely making some Mexican dish. We have made everything from Chorizo Breakfast Tacos to Campfire Burritos and have found that using our trusty pie iron has been the easiest.

Of course we like to do as much stuff as possible at home so there’s less work to do at the campsite, we’re there to relax, right? For this dish we did nearly all of the work at home. You can either use boneless skinless chicken breasts or a can of chicken. We used the can to make it easy. After chopping the vegetables we heated the whole mixture and added cheese. From there just spoon 1-2 tablespoons of the mixture on your tortilla and wrap it up. Once our chimis were prepared, we wrapped them in tinfoil and stuck them in the freezer until we left. This made for an easy (and delicious) dinner at the campsite!

Ingredients
  • 4, 7 in flour tortillas
  • 1 cup chicken, (or more) cut into pieces
  • ½ cup onion, chopped
  • ½ cup green pepper, chopped
  • ¼ cup Picante or enchilada sauce, green or red
  • ¼ tsp ground cumin
  • salt & pepper to taste
  • garlic salt to taste
  • ½ cup Cheddar cheese, cubed

Instructions

Once at the the campsite, butter both sides of your pie iron and insert your unwrapped Chimichangas. Heat over the campfire and you are done! We like to serve this meal with refried beans, lettuce tomato and sour cream.
