Thanksgiving recipes and wine pairing guide from Barrett Family Wines
Thanksgiving is right around the corner, and whether you’re cooking at the campsite or in your kitchen, these recipes will surely delight! Each recipe was tested in the 50 Campfires kitchen and passed the YUM test. If you have a Dutch oven you can make all of these recipes right at the campsite without too much hassle.
For this special Thanksgiving wine pairing guide, the folks from Barrett Family Wines picked their favorite recipes from our collection and paired it up with the perfect wine. We’re excited about these pairings and can’t wait to try them. Let’s get started!
Appetizers
Campfire Toasted Pumpkin Seeds
Classic salted pumpkin seeds pair perfectly with our Barrett Family Wines Chardonnay. Or, if you add bold, savory spices to the skillet like cumin, cayenne, or paprika, try pairing the toasted pumpkin seeds with our Merlot.
Torched Campsite Blue Cheese & Bacon Wrapped Mushrooms
We recommend pairing these earthy bites with our Cabernet Sauvignon.
Torched Apricots with Brie & Prosciutto Camping Appetizers
Our Chenin Blanc has hints of pear, apricot, and a slight touch of honeydew on the nose that perfectly complement the combination of salty and sweet flavors of prosciutto and apricots with optional honey.
Side Dishes
Darn Near Perfect Cornbread
On its own, cornbread shines with Chardonnay. For cornbread accompanied by chili, typically you’d pair it with beer. For a wine pairing, you could go with our juicy Syrah or our Merlot to complement the rich layers of flavors in the chili.
Dutch Oven Cheesy Potatoes
The subtle oak and soft tannins of our Barrett Family Wines Merlot will help cut through the richness of the potato, bacon, and cheese in this dish. If you prefer a white wine, the balanced acidity of our Chardonnay is also an excellent pairing.
Campfire Baked Sweet Potatoes
Our fruit-forward Chardonnay has hints of minerals that balance the richness of the sweet potato. With aromas of orange peel, floral, and spice, our 2017 Copper Falls Pinot Grigio is a slightly more exotic pairing with sweet potatoes.
Stoked Campfire Green Beans and Bacon
With notes of grass and minerals, our Ethereal Sauvignon Blanc is an excellent pairing for green beans.
Stuffed Pumpkin Done Picture Perfect
This is a bold side dish, but the end result is a visual masterpiece! The combination of sweet and savory flavors of this dish will stand out with the slightly peppery undertones of our Syrah Reserve.
Main Dish
Campfire Roasted Turkey
Certainly, Chardonnay is a classic pairing with roasted turkey. With the smoky, grilled flavors imparted by cooking on the campfire you could try a bigger wine like our Wild Vitis Vinifera Sangiovese.
Cannon Roasted Turkey On The Grill
Chardonnay is a classic pairing with roasted turkey. The combination of the golden-brown skin and flavors from the herbs and dry rub make pairing this recipe with our Ramato-style Pinot Grigio or even a red wine a feast for your eyes and your taste buds. Enjoy this roasted turkey with our 2017 Copper Falls, our Merlot, or our Cabernet Sauvignon.
Pit Roasted Turkey
Once again, Chardonnay is a classic pairing with roasted turkey. With the little bit of extra zing from the whole peppercorns and Tabasco sauce in this recipe, our 2017 Copper Falls Pinot Grigio or Syrah are also excellent pairings. For an elegant campfire meal, especially for those who love the outdoors and mountains, pair this with our Minarets Cabernet Sauvignon.
Dessert
Dutch Oven Three Berry Cobbler
The subtle oak, plum, dark berries and long finish of toasted notes in our Merlot make it a perfect match for a very berry cobbler.
Dutch Oven Cheesecake
Rosé is a perfect match for cheesecake, but ours is not the usual variety. We use 100% Cabernet Sauvignon grapes that produce a beautiful ruby-colored, semi-dry rosé with notes of watermelon, strawberry, and rhubarb. It’s exquisite on its own, and elevates cheesecake to something extraordinary. Our lightly sweet, aromatic Muscat Canelli also pairs well with a smooth and creamy cheesecake.
Banana S’more With More
Pairing wine with chocolate, peanut butter, and bananas sounds impossible, right? Not so. With hints of Japanese pear, honeysuckle, and green apple, our Muscat Canelli finishes with a refreshing balance of sweetness and acidity that stands up to the chocolate but doesn’t compete with the banana flavor like a red wine would. The most important thing about pairing food and wine: have fun with it!
Citrus Bread Pudding
A warm, rich bread pudding pairs perfectly with our lightly sweet, aromatic Barrett Family Wines Muscat Canelli. Another great match is our Summer Frost Sauvignon Blanc; its balanced acidity and complimentary tropical notes will cleanse your palate between bites.
