

Cooking over a campfire gives a true authenticity to the camping experience. It is fun to think of new things to try over the campfire and being that dessert is something that is always on my mind I thought it would be fun to create a campfire cake. This lemon & blueberry cake baked in oranges is fantastic and really gives the cake mix a fruity flavor. It is easy to make, with some slight trial and error in getting the guts of an orange out. Everyone around the campsite really loved it, which always makes it worth while!
CAMPFIRE LEMON & BLUEBERRY CAKE BAKED IN ORANGES
INGREDIENTS
Bag of oranges
1 pint fresh blueberries
1 box lemon cake mix & the ingredients required to make the cake mix per the directions on the box [Will likely require eggs, water and oil].
Tin Foil
DIRECTIONS
Cut off the top of an orange and scoop out the orange’s inside without splitting the peel. Save the insides for snacking and juice. Prepare cake mix per instructions on box. Pour cake batter into each hollow orange shell about 2/3rds full, place ten to twelve blueberries on the top of the cake batter, and put the top back on the orange. Rip off generous sheets of foil, for as many oranges as you have prepared. Wrap each cake-filled orange tightly in foil, gathering the foil to cover the top of the orange. Place oranges on hot campfire coals–top of oranges facing up so upright in campfire–for about 15-20 minutes or until cake is cooked in the middle depending on temperature of the fire. Use a tong to remove a test orange from coals. Orange should feel more firm than mushy. Open foil. If more time is needed re-wrap the foil and cook until done.
Spice cake mix with raisins is good also. If you do not wish to make multiple oranges, can make lemon cake pancakes in frying pan with remaining cake batter to snack on throughout the day.
