I’m sure you know the pure awesomeness of crock pot cooking. Put a bunch of ingredients in, leave it for 8 hours and come home to a fantastic meal. Well you probably wouldn’t think of bringing your crock pot camping. I’d like to reconsider that. They make crock pots designed for camping that run on propane, so electricity is required. After an all day hiking adventure, coming back to the campsite to find this Curry Chicken Crock Pot recipe ready to devour is a delight.

We have used a dutch oven for cooking at the campsite for years. We’ve made everything from bread to casseroles in it, but a crock pot is a little easier to use and requires a much smaller learning curve.

This curry chicken crock pot recipe is one of the simplest we have found and makes for an easy camping meal with very little preparation before hand. With just 3 ingredients it is a tasty chicken curry. It certainly makes a lot of food, so we have always made it when there is a group of us camping. Nothing like eating a gourmet meal while chatting around the campfire!

Curry Chicken Crock Pot Recipe

Ingredients
  • 2 lbs. boneless, skinless chicken breasts
  • 1 can coconut milk
  • 3 tablespoons green curry paste
  • 1 teaspoon pepper

Instructions
  1. Add chicken, coconut milk and curry paste to the slow cooker. Make sure it is all mixed together.
  2. Cook on low for 6-7 hours. Use 2 forks to pull apart the chicken.
  3. Serve and enjoy!
